Cheesy Bacon and Egg Cups

Cook time: 15 to 20 minutes
2/3 cup cottage cheese
3 tablespoons baking mix (such as Bisquick)
1/2 teaspoon garlic salt or sea salt
6 eggs
1 1/2 cups thickly shredded sharp Cheddar cheese
1/4 cup real bacon bits or crumbled bacon
Finely chopped red and green bell pepper (optional)
Preheat oven to 350°F and spray 10 muffin cups liberally with nonstick cooking spray or coat with butter. Beat cottage cheese, baking mix, salt and eggs in a small blender or whisk until very smooth. Stir in cheese and bacon and pour equal amounts into each muffin cup. Top with bell pepper, if desired. Bake for 15 to 20 minutes or until eggs are set. Let cool slightly, then remove by running a small thin knife around the edge of each. Makes 10 individual cups.
